Keto banana cake

For no particularly good reason, apart from there already being a banana cake recipe here, and that I like banana cake, here is another more suitable for a keto diet:

2 ripe bananas
3 tbsp softened butter
1/4 cup granular sweetener
2 large eggs
2 tsp vanilla extract
2 1/4 cup almond flour (blanched or unblanched)
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

I don't know whether it really matters much how you combine the ingredients, but I mash up the bananas with a fork, add the softened butter, sweetener, eggs and vanilla extract until there are no lumps (I don't bother with a mixer - just one more thing to clean).

Then I sift in the flour etc dry ingredients and mix well.

Put into a 20cm square, baking paper lined, baking pan, and bake until the top is really brown, about 30 minutes (don't let it burn!).

Probably about 5g net carbs/serving, when cut into 16 servings.

Quite yummy even if you're not into a keto diet.
I like re-using/re-purposing/recycling old pieces of technology and have boxes of 'useful' looking salvaged parts. One day I might actually make something original ;)

I like the fact that from the start you considered diabetics by leaving the sugar out :)
Exploring the works of the old inventors, mixng them up with a modern touch.
